Solutions
The solution seems straightforward: curb the carbs. But in a world saturated with dietary carbohydrates, thatâs often easier said than done! The problem is that we are hardwired to seek and eat carbohydrates because generating energy from glucose, specifically, is so efficient. Our cells, however, are designed to run lean; we just donât need the amounts of carbohydrates found in most of the foods we tend to eat.
It requires some willpower, but you can learn to live on fewer carbs and still enjoy food. One key is to simply not eat refined carbohydrates. One of the easiest ways to do that is by cutting out products made with flourânot just wheat flour, but any flour. This pertains to bread, pastries, cookies, pasta, grain bars (even the ones that are cleverly marketed to make you think they are âhealth foodsâ), and anything else made from flour. And yes, it also includes these same products made from gluten-free flour.
Sweetened beverages (with refined sugar, high-fructose corn syrup, and/or fruit sugar) are also major contributors to a typical daily diet. Yes, weâre referring to soft drinks, fruit drinks, coffee drinks/lattes, and the like. Carb counts for these products can range from 35-60 grams of carbohydrates in one serving! And, by the way, sugar is sugar! Donât be deceived by food labels that tout ânatural sugarsâ; these are all equally destructive in the body. This includes organic cane sugar, brown sugar, maple syrup, agave nectar, honey, molasses, high-fructose corn syrup, beet sugar, and others.
As recommended in Chapter 11 (Nourish), keep your carb count below 300 grams of carbohydrate a day when eating an average 2000-calorie diet, but less than 200 grams per day is more ideal.
Often by midlife, irreversible changes have occurred such that the ability of the pancreas to produce insulin has been permanently compromised. Even with strict dietary modification and exercise, glucose levels may remain elevated. In this case, supplements and medications may be necessary to normalize blood glucose levels.
